What is the gray goop coming out of my ear when it's infected?

I have an ear infection, and the discharge is smelly, but not like... particularly bad smelling, just sort of... possibly bread-ish smelling? And when I flush it with warm water, yucky grey stuff comes out. It's not like mucus, it's more solid, but not quite like ear wax (I don't think). Do you know what this could be? Do I have a fungal infection?
